Pineapple Sorbet with a kick! I used just over a pinch of Aleppo Chilli pepper and the kick was very subtle. Paprika and/or Cayenne would work too. This recipe is based on the Pineapple Sorbet recipe in Jeni’s book.

3/30/2012: TAKE TWO. I have modified this recipe - much simpler and tastes better! Instead of steeping the cake in the ice cream base as I had done previously (the result was way too rich!), the cake is now tossed with the caramelized pineapple and cherries, and folded later into the ice cream.
P.S. I used Dole canned pineapple like in the original recipe.

Some say that this flavor is blue raspberry, others say it’s lemon, or almond, or pineapple or bubblegum… Mine is Pineapple and Blue Curaçao.

Ice Cream Terrine: Red, White and Blue

This US Independence Day weekend, I made my very first Ice Cream Terrine: a red, white and blue layered ‘ice cream cake’ WITH NO ADDITIONAL FOOD COLORING.

OK, I guess the RED of the beets turned out to be more of a magenta, and the BLUE is more of an aqua…
Beet-Orange ice cream. Made with pureed sweet roasted beets, orange zest and mascarpone. Don’t be put off by the “beet”. This tastes like a creamsicle.
Lime-Cardamom Frozen Yogurt. A delicious tangy lime flavor with a hint of cardamon.
Blue Moon ice cream. Sweet pineapple and Blue Curacao…Yum.

*Birthday present for Christa! What a fun and interesting challenge this was! The result: RICH, SWEET, SPICY and very YELLOW! I actually added extra lemongrass and thai chillies in the batch that I made.
